On the hunt for healthy sweet alternatives I absolutely love this mango coconut chia pudding. For those of you that do and don’t like coconut the flavor is pretty subtle that you’ll definitely have to give it a try!
Mango Chia Pudding
- ½ cup chia seeds
- 1 can (400ml) coconut milk
- 1 tbsp vanilla bean paste
- 1 ½ tbsp organic coconut sugar
- 1 cup frozen mango blended ( (when ready to serve))
- Coconut shavings or dark chocolate chips to top while serving
If you have a large mason jar or Tupperware container place all the ingredients (except frozen mango) in the jar and stir everything together.
Close the lid and then shake well.
Place in the refrigerator overnight.
Before serving, give the chia pudding another good stirring.
To serve pour the blended mango between two serving bowls then top each with the chia pudding mixture and then top with coconut shavings or dark chocolate chips.
