These are one of the most requested biscuits in our house. They’re also the perfect Christmas cookie to bake and share. These fall under both categories of a biscuit and a cookie. Delicious Shrewsbury Biscuits: The Ultimate Christmas Cookies
- 2 cups spelt flour
- ¾ cup salted butter
- ⅔ cup castor sugar
- 1 large egg
Whip the butter and sugar together until light and fluffy. You can do this in a mixer or even a good hand mixing will work.
Whip in the egg.
Add half of the flour and mix well.
Add in the remaining flour and mix well. You should have a soft dough.
If you’re using a cookie press put the dough In the press and make the shapes you want.
If you plan to roll it out and use a cookie cutter split the dough into two disks and wrap them in plastic wrap and refrigerate for an hour before rolling and cutting.
Bake in a preheated oven at 350F for 15-17 minutes.
Remove and let cool on a wire rack.
Eat while they’re fresh and buttery.
Feel free to substitute all purpose flour for spelt if you don’t have it on hand. Depending on the shape you cut or press out you would get about 3 dozen small biscuits.
